Makes Two Dozen Pieces

2 cups rice flour
1 cup water
1 teaspoon vanilla
extra water
1/2 cup finely grated coconuts
1/2 cup sugar
4 tablespoons sesame seeds
1/2 teaspoon cinnamon

Knead flour with the 1 cup of water and vanilla, adding more water or flour if necessary. Form into 24 balls, then flatten into oval shape and set aside. Place water in a small saucepan about half full then bring to boil.

Drop in boiling water 3 to 4 at a time at a time then remove with slotted spoon when the ovals float to top and drop in cold water (Make sure that they are removed as soon as they float. If left cooking too long, they will become hard.)

Allow to stand in cold water for a few minutes. Combine remaining ingredients and place in a plate. Drain ovals and roll in the coconut, sugar, sesame seeds and cinnamon mixture. Serve immediately.
