Recipe: Grilled Lamb Chops with Aromatic Spice Rub

4 thick cut lamb chops, about 2 pounds
2 tablespoons olive oil
Aromatic Spice Rub (see recipe below)
Salt to taste

Brush both sides of lamb chops with olive oil, sprinkle with spice rub, season with salt, cover and marinate in the refrigerator for 2 hours, or overnight. Preheat electric countertop grill, stovetop grill pan, or outdoor barbeque. Grill lamb chops to desired doneness, about 5 to 7 minutes per side. Remove from grill and serve immediately.

Aromatic Spice Rub:

There are many variations on this basic spice rub. Some include cloves, mace, anise, cardamom, ginger, and other aromatics. Those included here are easy to find in powdered form, but if you have a mortar and pestle or a spice grinder, feel free to experiment with a few others as well. They're all delicious complements to lamb.

1 teaspoon black pepper
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon turmeric
1/4 teaspoon cinnamon
