Recipe: Kukuye Sabzi - Omelet
Serve 4
5 eggs, beaten
  1 medium onion, finely chopped
  1 tablespoon flour
  1 cup finely chopped green onions
  1 cup finely chopped parsley
  1/2 cup finely chopped dill
  1/2 cup finely chopped fresh coriander
  1/4 teaspoon salt
  1/4 teaspoon pepper
  1/4 teaspoon cumin
  1/4 teaspoon turmeric
  4 tablespoons butter
Thoroughly combine eggs with remaining ingredients, except butter, then set aside.
Melt butter in a casserole, then pour in egg mixture. Cover, then place in a 350 preheated oven and bake for 25 minutes. Cut omelet into 4 pie-shaped pieces, then turn each piece over. Return to oven, then bake for a further 10 minutes or until golden brown. Serve hot or cold.
