The waiters wear the regulation labourer's overalls, but the palatial surroundings with azure blue pillars and mosaic tiles belie the 'great factory' claim. Kebabs, too, are not the only product coming out of here. The restaurant has a sizeable vegetarian menu, with things like mashed lentils and yam, for non-meat eaters as well. The Factory's signature dishes like Galauti (minced mutton and papaya kebab) aside, the rest of the menu changes every day, so all that you are guaranteed to get on any day of the week is hot, fresh, simple north Indian food. For big eaters, there's an all-you-can-eat platter for Rs 595.
