Recipe: Indonesian-Style Fried Rice
The streets of Jakarta are lined with vendors preparing food of every ilk. This nasi goreng-style rice medley includes shrimp, chopped egg omelet and ground meat of your choosing, with jalapenos, garlic, onions, and the earthy flavor of cumin for spice, and if you like, a dash of fiery sambal oelek for a little extra heat.
2 tablespoons vegetable oil
1/2 pound ground meat (beef, pork, or lamb)
1/2 pound small shrimp
1 onion, finely chopped
4 cloves garlic, finely minced
2 jalapenos, seeded and finely chopped
4 scallions, thinly sliced
1 teaspoon cumin
¼ cup sweet soy sauce
1 teaspoon sambal oelek (optional)
6 cups cooked rice
2 eggs, lightly scrambled and chopped
1 cup chicken stock
Heat oil in a large wok. Add ground meat, shrimp, onion, and garlic and stir-fry until shrimp turns pink. Stir in jalapenos, scallions, cumin, soy sauce and sambal oelek if desired. Add rice, eggs and chicken stock and toss to mix. Remove from heat, cover and allow to stand for a few minutes before serving.
