Recipe: Banana Delight

Serves about 8

8 medium ripe bananas, peeled and sliced into thick rounds
1/2 cup brown sugar
4 Tbs. lemon juice
3 Tbs. butter
1 tsp. finely grated fresh ginger
1/4 tsp. cinnamon
1/8 tsp. ground cloves
2 Tbs. shredded coconut

Place bananas in a casserole and set aside.

Thoroughly mix remaining ingredients, except coconut, then spread evenly over the bananas. Bake in a 180 C ( 350 F) preheated oven for 15 minutes. Sprinkle coconut over top and bake for a further 5 minutes. Serve hot.
