General Tso’s Chicken

General Tso’s Chicken

Serves about 4

1 pound chicken breast, cut into thin slices 2 inches long
3 tablespoons soy sauce
1 tablespoon grated fresh ginger
1 teaspoon cornstarch dissolved in 1 tablespoon sesame oil
5 tablespoons sesame oil
2 dried medium-size chilli, cut in half
2 tablespoons finely chopped orange rind
1 teaspoon sugar

Place chicken, 2 tablespoons of the soy sauce, ginger and cornstarch in a bowl, then mix well and allow to marinate for about 1 hour.

Heat sesame oil in wok or heavy frying pan until very hot then remove chicken from marinade and stir-fry for 4 minutes or until it begins to brown. Remove chicken with slotted spoon and drain on paper towels then pour out the oil with the exception of about 2 teaspoons. Re-heat then stir-fry the chilli for a few seconds, then add chicken, the remaining soy sauce, orange rind and sugar, then stir-fry for 3 minutes. Serve immediately.
