Recipe: Dar Cheen Chicken
This dish is similar to a classic Sweet and Sour Chicken, with a little less sugar and a little extra spice in the sauce. Spicy-sweet and delicious!
Chicken:
4 chicken breasts, cut into thin strips
1 egg, lightly beaten
1 tablespoon soy sauce
1 teaspoon chili oil
3/4 cup flour
¼ cup cornstarch
Vegetable oil for frying
Combine egg, soy sauce and chili oil in a large bowl. Add chicken pieces to egg mixture and dredge in flour. Heat oil in a wok or large skillet over medium heat and fry chicken until golden brown and done through. Drain on paper towels.
Sauce:
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon chili garlic sauce
1/4 cup sweet chili sauce
1 cup chicken stock
1/4 cup pineapple juice
1 tablespoon cornstarch dissolved in 1/4 cup water
Combine all ingredients in a measuring cup and set aside.
Stir Fry:
1 tablespoon sesame oil
4 cloves garlic, peeled and minced
1 knob ginger root, peeled and thinly shredded (about 1 tablespoon)
2 jalapeno peppers, deseeded and thinly sliced
1 onion, peeled and cut into bite sized chunks
1 can sliced water chestnuts, drained and rinsed
1 cup snow peas, trimmed
1 cup pineapple chunks (add juice to sauce)
2 scallions, thinly sliced
Heat oil in a large wok or skillet. Add garlic, ginger, jalapenos, and onion, and stir-fry until just tender. Add sauce and stir constantly until thickened. Add fried chicken pieces and pineapple and toss gently to coat with sauce. Serve over steamed rice and garnish with scallions. Serve with steamed rice. Serves 4.
