Tuna and Beef Tataki

Tataki is a simple Japanese dish made by lightly searing meat or fish over an open fire or on a hot griddle. Although there are certain variations in preparation techniques and condiments, this recipe represents the classic presentation.

Tataki:
½ pound fresh tuna, sushi grade
½ pound lean boneless beef, sirloin strip or filet mignon
Vegetable oil

Condiments:
1 large knob ginger root, peeled and finely shredded (about 1 teaspoon)
2 scallions, thinly sliced
1 tablespoon wasabi paste
Ponzu sauce (substitute soy sauce)

Preheat grill pan to 500 degrees in an oven or broiler. Trim tuna and beef into uniform blocks about 2 to 3 inches square. Rub tuna and beef with vegetable oil and place on the hot grill pan. Cook on all sides for one minute or less per side, just enough to sear the outer surfaces, leaving the center raw. Remove immediately and set aside to cool. Thinly slice each block of tuna and beef and place on individual serving dishes. Garnish with scallions and serve with ginger, wasabi, and ponzu or soy sauce. Serves 4.

 Cook's Note: Tataki may also be prepared over an open fire or under an oven broiler.
