Recipe: Sichuan Stir-Fried Shrimp
Serves 4
2 tablespoons tomato paste, dissolved in 4 tablespoons water
2 teaspoons vinegar
2 teaspoons sugar
1 tablespoon soy sauce
1/4 teaspoon salt
1/8 teaspoon cayenne
2 tablespoons sesame oil
4 cloves garlic, crushed
1 small onion, thinly sliced
2 cups sliced mushrooms
1 pound shelled shrimps
Thoroughly combine diluted tomato paste, vinegar, sugar, soy sauce, salt and cayenne to make a sauce then set aside.
Heat sesame oil in a wok or frying pan then add: garlic, onion and mushrooms and stir-fry until onion becomes tender. Add shrimps and stir-fry until shrimps turn pink. Add sauce then stir-fry for 2 minutes and serve.
