Recipe: Chicken Kabab

Serves 6

2 pounds de-boned chicken, cut into 1 1/2 inch cubes 2 medium onions, grated
4 tablespoons lemon juice
1 1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon marjoram
1/8 teaspoon saffron, diluted in 2 tablespoons water
butter

Place chicken, onions, lemon juice, salt, pepper, marjoram and saffron in a bowl, then allow to marinade for a day.

Place chicken on skewers, then grill, brushing occasionally with butter, until done.

Should be served as above with grilled tomatoes, atop a platter of rice.
