Recipe: Cucumber Salad - Salatat Khiyar
Serves 6 to 8
4 tablespoons olive oil
1 large onion, finely chopped
1 medium sweet pepper, finely chopped
1 teaspoon ginger
3/4 teaspoon salt
2 cups yogurt
2 medium cucumbers, peeled and chopped
Heat oil in a frying pan, then sauté onion and sweet pepper until onion turns limp, but not brown. Transfer frying pan contents into a serving bowl, then allow to cool. Stir in remaining ingredients, then refrigerate for at least one hour. Serve well-chilled.
