Recipe: Lentil Soup - Ezo Gelin
Serves about 8
1 cup split red lentils
9 cups water
2 onions, finely chopped
1/2 cup rice
4 cloves garlic, crushed
2 tablespoons tomato paste
2 tablespoons lemon juice
2 teaspoons salt
1 teaspoon pepper
1 teaspoon cumin
1/2 teaspoon chilli powder
4 tablespoons butter
2 tablespoons dried mint
Place lentils, water, onion and rice in a saucepan, then bring to boil and cover. Cook over medium/low heat for 40 minutes, stirring a few times. Stir in garlic, tomato paste, lemon juice, salt, pepper, cumin and chilli powder then cook for 5 minutes.
In the meantime, melt butter in frying pan, then stir in mint and remove from heat.
Place soup in a serving bowl, then stir in frying pan content and serve.
