Recipe: Sambal Iris - Vegetarian Condiment
Makes about 2 cups
2 medium onions, sliced in thin strips
1 large tomato, finely chopped
1 medium red hot pepper, cut into thin strips
1 small hot green chilli, cut into thin strips
4 tablespoons, finely chopped fresh basil
1/2 cup lemon juice
1 tablespoon finely chopped lemon zest
Thoroughly combine all ingredients, then refrigerate for about 1 hour before serving with all types of meat and vegetables.
