Chili Shrimp

Like Singapore itself, this recipe has all the flavors of Asia in one dish.

Singapore-Style Chili Shrimp

2 tablespoons vegetable oil
1 pound large shrimp, peeled, tails intact
1 knob fresh ginger root, finely shredded
4 cloves garlic, finely minced
1 shallot, finely chopped
1 green chili, seeded and finely minced

Sauce:
1 tablespoons Asian fish sauce
1 tablespoon soy sauce
1 tablespoon Chinese rice wine
1/4 cup ketchup
1/4 cup tamarind water
1 lime, juice only
1 tablespoon rice vinegar
1 teaspoon black bean paste
1 teaspoon oyster sauce
1 teaspoon chili garlic sauce
1 tablespoon sugar
1 tablespoon cornstarch dissolved in 1/4 cup water

Combine all sauce ingredients in a measuring cup and set aside. Heat oil in a wok, add ginger, garlic, shallot, and chili and stir-fry until tender. Add prawns and stir-fry until just pink and tender. Add sauce and simmer until slightly thickened. Serve over steamed rice. Serves 4.
