Recipe: Thot Man Pla - Fried Fish Patties

Serves about 4

1 pound fish fillet, cut into pieces
2 eggs, beaten
4 tablespoons finely chopped green onions
4 cloves garlic, crushed
4 tablespoons finely chopped lemon grass
2 tablespoons finely chopped coriander
1 tablespoon grated fresh ginger
1/2 teaspoon pepper
1/2 teaspoon grated lemon rind
1 tablespoon shrimp paste
2 tablespoons finely ground hot chilli pepper
1 cup finely chopped green beans
vegetable oil

Place all ingredients, except beans and vegetable oil, in a food processor, then process into a fine paste. Transfer to a mixing bowl, then combine with the beans. Form into small patties, then set aside. If paste is too soft, add a little flour

Place oil in a saucepan to about 2 inches deep, then heat. Deep-fry the fish patties until golden brown. Serve with a peanut or another sharp-tasting sauce.
