Recipe: Pad Paak Ruamit / Stir-Fried Vegetables
Serves about 6
4 tablespoons peanut oil
1/2 pound broccoli, chopped
1 pound fresh or thawed frozen corn
1/2 pound spinach leaves, thoroughly washed and chopped
1/4 pound mushrooms, sliced
2 tablespoons finely chopped hot chilli pepper
1 medium onion, thinly sliced
4 cloves garlic, crushed
4 tablespoons finely chopped lemon grass
2 tablespoons fish or oyster sauce
1 tablespoon soy sauce
1 tablespoon sugar
1 cup bean sprouts
Heat oil in a wok or frying pan, then add all ingredients, except sugar and bean sprouts. Stir fry until vegetables are barely cooked, then stir in sugar and bean sprouts and serve immediately.
