Recipe: Almond Pudding - Basbousa bil Loz
Serves 8
1 cup sugar
1 1/2 cups water
1 tablespoon lemon juice
1/2 teaspoon almond extract
6 tablespoons butter
1/2 cup finely ground almonds
1/2 cup semolina
whipped cream
Place sugar and water in a saucepan, then bring to boil, stirring a few times. Stir in lemon juice and almond extract then simmer for a few minutes. Set syrup aside but keep warm.
Melt butter in a frying pan then stir-fry almonds and semolina over low heat until they begin to turn light brown.
Slowly add syrup to almonds and semolina while stirring constantly and continue until puddings thickens, then remove from heat. Pour into pudding cups, then decorate with whipped cream and serve warm.
