Recipe: Nectarine Salad With Ginger Vinaigrette Dressing

Serves 6 to 8

4 tablespoons peanut oil
1/4 cup fresh ginger cut into thin strips
2 tablespoons grated fresh ginger
4 tablespoons vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
2 medium nectarines, cut into thin slices
12 water chestnuts, peeled and thinly sliced
6 cups chopped lettuce

Heat oil in a frying pan until it shimmers, then stir in ginger strips. Fry for a few seconds until golden. Quickly strain and reserve oil, then place fried ginger strips aside and allow oil to cool. Place oil, grated ginger, vinegar, sugar, salt and pepper in a blender, then blend for a minute to make dressing. Place nectarines, chestnuts, and lettuce in a serving bowl, then toss. Gently stir in dressing, then top with fried ginger and serve.
