Recipe: Sichuan Green String Beans
Serves about 6
4 tablespoons cooking oil
1/2 pound ground pork
2 pound string beans, trimmed, broken in 1 to 2 inch pieces than washed then deep fried in oil for 1 minute, then drained
6 cloves garlic, crushed
4 tablespoons soy sauce
1 tablespoon sugar
1/2 teaspoon chilli flakes
1/4 cup water
2 teaspoons sesame oil
1 cup chopped green onions
Heat oil in a heavy frying pan or wok then stir-fry pork over medium/high heat for 4 minutes. Add beans and garlic and stir-fry for a further 4 minutes. Stir in remaining ingredients and stir-fry for a further 2 minutes then serve hot.
