Recipe: Sinigang - Shrimp Soup
Serves about 8
6 cups of water
2 medium onions, finely chopped
4 medium tomatoes, chopped
1 cup string beans, cut in to 1 inch pieces
1 small hot pepper, finely chopped
4 cloves garlic, crushed
1 tablespoon tamarind paste, dissolved in 1 cup warm water
2 tablespoons fish sauce
1 teaspoon salt
1 pound unshelled shrimps
1 10 oz package spinach, thoroughly washed and chopped
Place water, onions and tomatoes in a saucepan and bring to boil, then cover and cook over medium heat for 15 minutes. Add beans, hot pepper, garlic, tamarind water solution, fish sauce and salt, then re-cover and cook over low heat for 10 minutes. Add shrimps and cook for a further 8 minutes. Turn off heat and add spinach, then cover and allow to cook in own steam for 10 minutes.
