Recipe: Sot Ca Chua - Tomato Sauce
2 tablespoons peanut oil
6 cloves garlic, crushed
4 medium tomatoes, seeded and finely chopped
1 cup coconut milk
1/4 cup water
1 teaspoon salt
1 teaspoon sugar
In a frying pan, heat oil, then stir-fry garlic over high heat for a minute. Add tomatoes, then sauté over medium heat for 5 minutes. Stir in remaining ingredients, then bring to boil. Simmer over medium heat, stirring every few minutes until sauce thickens, then serve with all types of entrées.
