Recipe: Thai Peanut Sauce

Can be served with various types of meats and vegetables.

1/4 pound roasted peanuts, finely ground
3/4 cup coconut milk
1/2 cup finely chopped fresh coriander leaves4 cloves garlic, chopped2 tablespoons finely chopped onion1 tablespoon red curry paste2 teaspoons fish sauce
1 tablespoon grated ginger4 tablespoons lemon juice
1 tablespoon soy sauce2 teaspoons sugar.

Place all ingredients in a food processor, then process into smooth sauce. Serve or store in a jar in a refrigerator for a few days.
