Recipe: Ga Xao Xa Ot - Chicken with Lemon Grass
Serves from 4 to 6
4 tablespoons vegetable oil
2 medium onions, thinly sliced
4 cloves garlic, thinly sliced
2 tablespoons finely chopped lemon grass
1 small chilli, finely chopped
2 pounds chicken breast, cut into 1/2 inch cubes
1/2 teaspoon salt
3 tablespoons Nuoc Mam
1 tablespoon sugar
1 1/2 cups water
In a frying pan, heat oil over medium heat. Add onion and garlic, then stir-fry over medium heat for 3 minutes. Add lemon grass and chilli, then stir-fry for further 2 minutes. Stir in chicken and fry for a further 5 minutes, stirring a number of times. Add remaining ingredients, then cover and allow to simmer over low heat for 40 minutes or until chicken turns tender, stiring a number of times and adding more water if necessary.
