Recipe: Sichuan Tuna or Salmon
Serves 6 to 8
2 pounds tuna or salmon fillet
Marinade
1 teaspoon chilli flakes
4 tablespoons soy sauce
4 tablespoons honey
2 tablespoons water
1 tablespoon grated ginger
Sauce
3 tablespoons mayonnaise
2 tablespoons honey
1/8 teaspoon cayenne
Place tuna or salmon fillet in a casserole then combine the marinade ingredients and pour over steaks. Allow marinading for 1 hour, turning the steaks over once or twice.
Make a sauce by combining the sauce ingredients then set aside.
Wrap fillet with aluminium foil then barbecue over medium heat for about 10 minutes, turning over fillet once. Serve with sauce.
