Recipe: Meat Patties - Kabab Iroog

Depending on size, makes from 20 -25 kababs

Unlike in other Middle Eastern countries where kababs are usually barbecued, traditional Iraqi kababs are made into patties and fried. I have tried them both fried and cooked in an oven and I found the oven ones preferable. Also, I have added eggs, which are not included as part of the ingredients in the traditional recipes for kababs.

1 pound ground lamb or beef
1 small sweet pepper, finely chopped
1 large tomato, finely chopped
1 medium onion, chopped
2 cloves garlic, crushed
1/2 cup flour
2 eggs, beaten
2 tablespoons finely chopped coriander leaves
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon turmeric

Place all ingredients, except oil, in food processor, then process for 1 to 2 minutes. Form into patties about 1/2 inch thick and set aside. Place patties in a greased baking pan, but if dough is too soft, spoon into the pan with a large spoon, then form into patties. Bake in a 350º F preheated oven for 1 hour or until tops turn golden brown.

Note: If to be fried add more flour to harden the dough.
