Recipe: Vietnamese Sweet and Sour Tofu

Serves about 8

4 tablespoons lemon juice
4 tablespoons Nuoc Mam
4 tablespoons water
4 tablespoons tomato paste
2 tablespoons sugar
1 teaspoon ground ginger
4 cloves of garlic, crushed
1 pound extra solid tofu, diced into 1/2 inch cubes
3 tablespoons vegetable oil
1 cup chopped green onions
2 medium sweet peppers, sliced in thin strips
1 pound mushrooms, sliced
1 cup toasted cashews

Combine well lemon juice, Nuoc Mam, water, tomato paste, sugar, ginger, and garlic, then gently stir in tofu and allow to marinate overnight.

Heat oil in frying pan, then stir-fry over medium/high heat green onions, sweet peppers, and mushrooms for 3 minutes. Stir in the tofu mixture with is marinade, then continue to stir-fry for 4 minutes. Remove from heat, then stir in cashews and serve over cooked rice.
