Recipe: You Tiau - Chinese Crullers

A much simplified dish from the original version, these crullers can be eaten as appetizers or as bread with soups and stews.

1 pound of bread dough (if frozen thaw) oil for deep frying. Form dough into about 18 balls, then roll in palm of hands into 1/2 inch in diameter cylinder shape. Cover with cloth towel, then let stand for1 hour. Place oil in a saucepan about 11/2 inch deep, then heat. Take each cylinder with fingers on both ends, then twist and pull. Drop into the oil, then deep-fry until golden brown. Remove with slotted spoon, place on paper towels. Serve warm.
