Recipe: Lumpia - Fried Egg rolls
Makes 20 rolls
Lumpia, a Chinese inspired creation, which is one of the most popular Philippine dishes, can be made from a wide range of ingredients. This is my version.
4 tablespoons cooking oil
1 pound ground beef
1/4 pound chopped cooked shrimp
1 medium onion, finely chopped
5 cloves garlic, crushed
1 cup finely chopped mushrooms
1 cup finely chopped potatoes
2 tablespoons soy sauce
2 teaspoons oyster sauce
1 teaspoon fish sauce
1/2 teaspoon pepper
1 275 g (10 oz) package of 20 spring roll wrappers
oil for frying
Heat oil in a frying pan, then sauté beef over medium heat for 10 minutes. Stir in remaining ingredients, except spring roll wrappers and oil, then stir-fry for further 4 minutes to make filling.
Lay wrappers on a flat surface, then place about 2 heaping tablespoons of filling [in a] evenly across 1 inch from each edge of wrapper. Fold edge over filling then fold both ends over filling and roll into cigar shape. Moisten the last edge of the wrapper with dabs of water to seal. Repeat using the remainder of wrappers.
Heat oil in a saucepan, then fry lumpia for about 5 minutes or until golden brown, turning over. Serve with dipping sauce.
