Recipe: Serundeng - Peanuts with Coconut
Serves about 6
6 tablespoons vegetable oil
2 cups raw peanuts
2 cups chopped green onions
3 garlic cloves, crushed
1 tablespoon shrimp sauce
1 teaspoon ground coriander seeds
1/2 teaspoon salt
1/2 teaspoon cumin powder
1 cup shredded coconut
1 teaspoon brown sugar
2 tablespoons lemon juice
1 cup water
Heat oil in a frying pan, then fry peanuts over medium heat until they barely begin to brown. Remove peanuts from pan with a slotted spoon, then allow to cool. Reserve oil. Add to the to reserved oil in frying pan remaining ingredients, expect water, then stir fry for a few minutes. Add water, then cover and simmer over low heat for 40 minutes or until water is completely absorbed, stirring frequently. Stir in peanuts, then allow to cool before serving.
